Polite Words

What is the difference between "Can�� and "Could�? Words are used in different cultures to say things nicely? But in some cultures the language may sound very direct or formal. This can cause problems between cultures. Kiwis like to use polite language irrespective of age, class or status. So how polite is your English speaking and writing?
